Today I made chicken burgers and salad. I found the recipe from this site. Yannis Lucacos is a really known greek chef, and this morning I found his site. I tried the recipe and it was amazing!! So, i highly recommend you to try it!
Burgers
You'll need ::
650gr minced chicken
60gr olive oil
200gr red onions, chopped
100gr carrots, chopped
40gr spring onions, chopped
15gr garlic, crashed
20gr ginger, crashed
125 gr toast bread, ground
1 egg
5gr fresh mint
5gr fresh oregano
1 gr coriander powder
salt
How to ::
Heat a pan and add the half olive oil, red onion and carrot. A couple of mins later add the spring onions, garlic, ginger and a pinch of salt and cook for 3 mins more. Set aside and let cool! Then add the rest of the ingredients in a large bowl and mix with your hands. When the onions are cool, add them too in the minced chicken mixture. Preheat your over to 180C. Heat the rest of the olive oil in a pan and brown your burgers for a minute or so, from each side. Then put into the oven for 10-13minutes. Ready to serve!
Salad
You'll need::
50gr red peppers, diced
50gr yellow peppers, diced
280gr white cabbage
130gr red cabbage
90gr mayonnaise
90gr yogurt
10gr honey
10gr mustard
30gr balsamic vinegar
salt
How to::
Mix all the ingredients and let it marinate for at least 1-2 hours.
