a handful of arugula
1/2 cup of pine nuts
1/2 cup of extra virgin olive oil
1/2 tsp salt
1 tbsp garlic paste or if you don't have any use 4 garlic gloves unpeeled and boiled
1/2 cup of fresh Parmesan cheese
Toast the nuts in a pan over medium heat until light brown.
Combine the arugula, nuts, salt and garlic into a food processor. Pulse while drizzling the olive oil into the processor. Remove the mixture, put it into a bowl and stir in the Parmesan cheese.
(if you don't eat it right away, store it in the fridge)
