Bruschetta with vegetables and ricotta cheese


I had this delicious lunch today :) Jealous? If you want to make it :
You 'll need ::
5 tomatoes
2 eggplants
3 zucchinis
2 red onions
salt, pepper, sugar, olive oil
some parsley
ricotta cheese and bread

How to ::
Preheat the oven to 200C. Dice the vegetables into cubes and leave two tomatoes aside. Then add the tomatoes, garlic, some parsley, 1 tsp of sugar, salt, pepper and olive oil into the food processor and blend. Put the diced vegetables and the tomato sauce in a pan and straight in the oven for about 45-50 mins. Cut a piece of bread and 5 mins before the veggies are ready, put it in the oven. When ready, spread ricotta cheese onto your bread and put as  much as many vegetables you want on top! Ta da!
